What We Ate Last Week: A Delicious Round-Up 6/23-6/29
Welcome back, friends! Whether you're a long-time reader or new to my blog, I'm excited to share a recap of last week's delicious meals. Mostly focusing on dinner, with an occasional breakfast or lunch highlight, here's a peek into our family’s kitchen adventures:
Sunday & Monday: Philly Chicken Cheesesteak Casserole Our family loves this recipe! It’s the perfect combination of cheesy and spicy, making it an instant hit. This casserole usually makes enough for two nights, and I often bake a loaf of bread to stretch the meal even further.
Tuesday: Cranberry Jalapeno Chicken Salad I doubled the recipe to ensure we had leftovers for lunch for the rest of the week. Paired with store-bought potato salad and chips, it made for a satisfying and flavorful meal.
Wednesday: Breakfast for Dinner Every Wednesday, we enjoy breakfast for dinner. This week, I made a large batch of Blueberry Muffins using a new recipe—I can’t wait to make more! We paired the muffins with scrambled eggs and fresh fruit for a simple yet delightful dinner.
Thursday: Chick-Fil-A Copycat Sandwiches It was our oldest daughter’s 11th birthday, and she requested my Chick-Fil-A Copycat Sandwiches. We served these with homemade French fries, making for a birthday dinner she loved.
Friday: Pesto Chicken Pasta Bake I whipped up a quick Pesto Chicken Pasta Bake, which was both easy and delicious—a perfect end-of-the-week meal.
Saturday: Birthday Party Feast For our daughter’s birthday party, we kept it classic with hot dogs and hamburgers from GFS, accompanied by lots of yummy sides including my favorite fruit salad recipe. It was a fun and festive way to celebrate her special day!
