What We Ate Last Week: A Catch-Up Edition
I'm so behind on writing this blog post. We were out of town for a long weekend, and I feel like I've constantly been playing catch-up ever since. Today (Wednesday) was finally my first day getting our home back in order and organizing things, so it feels good to be sitting down and reflecting on our meals from last week. Here's what we enjoyed:
Sunday: Sweet and Sour Chicken Bowls
We kicked off the week with Sweet and Sour Chicken Bowls, paired with some edamame on the side. This meal is such an easy go-to, and it’s fairly high in protein, depending on the ingredients you use. Our family absolutely loves this one!
Monday: Million Dollar Spaghetti
Our sweet 11-year-old daughter took the reins for dinner! This is something new we’re starting as part of our homeschooling, helping her build confidence in the kitchen. She made Million Dollar Spaghetti, and let me tell you, it was delicious! Plus, it lasted us for two nights, which is always a win.
Tuesday: Leftovers
We enjoyed the leftovers from Monday's Million Dollar Spaghetti. This time we paired it with some sourdough bread! It was just as good the second time around!
Wednesday: Wedge Salads & Loaded Baked Potatoes
We kept things simple with Wedge Salads and loaded baked potatoes. I love how versatile this dinner idea is—you can add whatever you want to both the potato and the salad, making it perfect for any craving.
Thursday-Saturday: Out of town
We were out of town these days, so we didn’t eat at home.
However, I did bake some Nutella Banana Bread to share with family while we were visiting, and it turned out pretty yummy!
Another thing I made at the beginning of the week for breakfast was sourdough waffles. They were simple to make and they are so delicious! The recipe is back a few blog posts!
