What We Ate Last Week - 8/11-8/17
Last week, I got creative in the kitchen and relied on what we already had in the pantry, skipping the usual grocery run. It actually worked out pretty well!
Sunday: Colts Game
We kicked off Sunday by attending an Indianapolis Colts game, enjoying a suite with tons of delicious options. The dessert cart was the highlight!
Monday & Tuesday: Chicken Pot Pie Tater Tot Casserole
Monday and Tuesday were all about comfort food with a chicken pot pie tater tot casserole. It took a bit of extra seasoning to make it just right, but I appreciated that it stretched over two nights.
Wednesday: Mexican Burger Bowls
On Wednesday, we switched things up and had burger bowls with fries instead of our usual breakfast-for-dinner. I added homemade taco seasoning to the ground beef for a Mexican twist, and I loved using some veggies we had on hand.
Thursday: BBQ Chicken Pizza with Sourdough Discard Crust
Thursday night, we had BBQ Chicken Pizzas with a crust made from my sourdough discard. I’m obsessed with this recipe! I learned that using discard sitting in the fridge works better—the fresher it is, the more tangy the sourdough gets.
Friday: Berry Trifle to share with friends
Friday was spent with friends, and I brought my favorite berry trifle to share, which was a hit!
Saturday: Leftovers
We wrapped up the week on Saturday with a simple meal of leftovers, clearing out the fridge.
It was a week of delicious meals, all without a trip to the store!
