What We Ate Last Week - 7/14/7/20
Hey everyone! Just a heads up, I primarily shop at Aldi for our groceries, with a few trips to Walmart each month for bulk items. Here's a rundown of our meals from last week:
Sunday: Leftovers
We kicked off the week by cleaning out the fridge and eating leftovers. I like to start the week with a clean slate, which for me means an empty fridge!
Monday: Broccoli Mac & Cheese
I added chicken for some extra protein. This is a family favorite, and of course, the kids love it!
Tuesday: Chicken Carnitas
This recipe is a winner because it stretches over a few meals and is always a hit with guests.
Wednesday: Leftover Chicken Carnitas
We continued to enjoy the chicken carnitas from the day before.
Thursday: Baked Scrambled Egg Dish
It was just me and the toddler, so I whipped up a baked scrambled egg dish topped with fresh tomatoes. It was unplanned but absolutely delicious. I paired it with sourdough cinnamon toast I had made earlier in the week.
Friday: Chick-fil-A Treat
My mama brought us Chick-fil-A for lunch, and I saved the side salad for dinner. My toddler had a quesadilla, making it a simple but satisfying meal at zero cost!
Saturday: Bruschetta Chicken Pasta
We ended the week with this delightful dish. I highly recommend using the higher-end pasta from Aldi, paired with fresh tomatoes and basil from the garden for an extra tasty meal.
Additionally, I made a new sourdough recipe this week: sourdough cinnamon bread. It wasn't a dinner item, but it was gone in just two days. The delicious glaze was a bonus I wasn't expecting and easy-to-cut squares made it a family favorite.
